This past weekend the girls and I made Chocolate Covered Rice Krispie Peanut Butter Balls to save for Christmas.  They were SO easy to make and turned out delicious.  Here is the recipe we used:

Chocolate Covered Rice Krispie Peanut Butter Balls
  • 2 cups creamy peanut butter
  • 2 cups powdered sugar
  • 4 Tbs. butter, melted
  • 4 cups rice krispies

Mix everything together and roll into balls and place on wax paper. Chill for 15-20 minutes.

While peanut butter mixture is chilling melt in double boiler:
  • 1 bag (16 oz) of chocolate chips
  • 2 Tbsp. vegetable shortening
Dip the balls into the chocolate to coat and place in fridge to set up.  Makes approximately 4 dozen.

    Celeste ~ So gad you like them!! I have ours in a plastic container in the fridge. As for how they set… I don't know, they don't get super hard, but the chocolate does harden back up after it has cooled.

    Angela ~ I just semi-sweet since that is what I had in the cupboard, but I would have used milk chocolate if I had it, since that is what I prefer with peanut butter. White Chocolate Chips would be great too!

    I've noticed your girls' aprons several times in your posts and they're so cute! Where do you find them? I know children's aprons are available at many places, but I always like to go off of good recommendations!

    These look great! I'm thinking I could do them in a way my dd could eat them using sunbutter and soybutter…but I wonder if there is dairy free chocolate? Hmmm. I'd have to look. Thanks for sharing!

    Jenny ~ The aprons the girls have on in this picture were a gift from their Grandma a couple years ago. They have been well loved, and are pinned together in a couple of places! 😉 We also have 2 solid red Pampered Chef childrens apron with chef's hats that have been WONDERFUL! (Pampered Chef doesn't sell them anymore, but I'm sure they can be found on ebay. Anyhow, the girls are both recieving a couple new aprons for Christmas. They are each getting one from Catholic Embroidery (I had them embroider "Catholic Cuisine" — the name of my other blog — onto the front) and the other two I purchased from KidSteals.com when they had some of the children's Jesse Steele mother daughter sets listed. (Kid Steals had more listed today, but they have already sold out.)

    Evie ~ They would still be yummy without the chocolate coating, but it seems like there would be dairy free chocolate chips available at the health food store? I'd love to hear if you find any, and how it works out… I am "severely intolerant" to dairy myself, but just horrible about staying away from it…

    These look oh so good! I have a similar recipe made with mashed potatoes and coconut dipped in chocolate that taste exactly like a mound chocolate bar! Very easy and very delish too! I don't wear them well anymore 😉 so I give them to friends and neighbors. PJ
