Simple Homemade Granola {and Giveaway Winner!}

Recently a friend of mine shared a recipe for her delicious Homemade Granola, made with coconut oil and sweetened with honey.  Yesterday I made another batch and took a few pictures to share, along with the recipe.   (Oh, and the flowers were my St. Valentine’s Day gift from Hubby, along with a couple new skirts!!!  I guess he got tired of hearing me say that “nothing fits!”;)  He is such a sweetie!)

Simple Homemade Granola

Ingredients:
  • 12 cups oats (I used Bob’s Red Mill Gluten Free Whole Grain Rolled Oats
  • 4 cups unsweetened Coconut Flakes (I used one package of these)
  • 6 cups of raw nuts and seeds (I used 3 cups of almonds, 1 cup of walnuts, 1 cup of pecans, and 1 cup of sunflower seeds)
  • 1 cup coconut oil
  • 1 cup honey
  • optional: 3 cups of raisins or other dried fruit, add after baking

Directions:

1. Preheat over to 350°F.
2. In a small saucepan over low heat, mix together the coconut oil and honey.
3. In a large bowl combine oats, coconut, nuts and seeds.
4. Pour coconut oil and honey mixture over dry ingredients and stir very well to coat.  Divide onto three baking sheets.
5. Bake for 10 minutes; remove from oven and stir. Place back in oven but remove and stir every 5 minutes or so until the oats are golden brown (approx. 30 minutes).
6. Cool; add raisins or other dried fruit.

Since I changed my comment format and they are no longer numbered, we decided to have a “real” drawing, instead of using the Random Number Generator, for our  giveaway of A Lenten Journey with Jesus Christ & St. Therese of Lisieux.  It seemed most appropriate to have our little “Rose”  select the winner.  🙂   Congratulations Sherri!

I'm glad you shared this recipe, because I have one that calls for canola oil and was planning to sub coconut oil next time I make it. So I'm glad to know it works in a granola recipe. I bet it's so yummy!!

So in my house we say OMP (Oh my pizza!) so here it goes: OMP!!!! I just got back from a meeting with a bunch of moms talking about how important it is to have breakfast, especially our little ones. And we shared a bunch of recipes for granola, granola bars and granola cookies! Guess what I'm going to be making this weekend? Actually may have my kids make it, because it is soooo easy 😉 God bless you Jessica, thanks for always being an inspiration!!!!

While we're on the skirt topic, I'd love to wear them more often, but how do you wear them in the winter? I'm always cold and live on Northern California (San Francisco Bay Area). What do you wear to keep those lovely legs warm? =)

I was born in Alameda! My dad was stationed there for awhile when he was in the Coast Guard. 🙂 About wearing skirts in winter, I freeze if I don't wear warm tights and boots with them! I ended up changing into one of my new skirts after my Hubby gave it to me on Tuesday, before heading to town, and wore it with some extra thick black tights and knee high black boots. I stayed plenty warm and it was cold… even started to snow again on our way home!

So, could you do me a favor? Next time you take a picture of your kitchen, could you mess it up a little in the background? You know, just to make me feel better about myself. 😉

    (That granola looks tasty!)

That granola looks super delicious, and best of all-a healthy treat! Thanks for sharing the recipe. I have to confess, I'm not sure which is more impressive: that you whipped up a big batch of homemade granola, or that your kitchen is immaculately clean at the end 😉

okay… Here is the other counter which was carefully excluded from the pictures yesterday… Now maybe I will be motivated enough to get all that stuff, which has been sitting there for at least a week, put away! 🙂

Thanks so much for the granola recipe! We've been wanting to make a batch for a very long time and this looks right up our alley. One question: any suggestions for substituting the coconut–since there's so much of it–we're not big fans of it.

And thank you for the blog as a whole. It is such a blessing!

Alameda! That's not too far from me. And yes it doesn't get as cold as where you live now, but you're talking to a latin girl here =) I was born and raised in Peru, so I'm a hot climate kind of gal ;)thanks for the tip! I guess I'll be doing some shopping after this baby comes (technichally in about 5 weeks, but it feels more like yesterday 😉

Thanks for sharing this recipe! I just wanted to share that I recently saw a video clip which described how powerful/nutritionally good coconut oil is for Parkinson's and Alzeihmers!

We made the John the Baptist granola from Catholic Cuisine the other day, without the raisins or nuts (b/c husband is terribly allergic to tree nuts and I don't like raisins) and it was such a hit. I think the kids and I finished it that afternoon. This recipe looks like another great option. Thanks for sharing!

I would either just leave it out, or substitute it with a mix of more oats and nuts/seeds. My oldest doesn't like coconut either, but he is liking this granola. I think it might be the difference of using the unsweetened coconut flakes and toasting them, versus the sweetened shredded coconut un-toasted, which he can't stand.

Thank you CeAnne! We were very blessed to be able to pull together the remodel/addition on a small budget. Our contractor was amazing and we were able to get some really great deals on just about everything. It was so stressful choosing everything, and hoping it would all go together, but we have been so happy with the results. 🙂

Prayer of Mothers

Father in heaven, grant me the grace to appreciate the dignity which you have conferred on me. Let me realize that not even the Angels have been blessed with such a privilege—to share in your creative miracle and bring new Saints to heaven. Make me a good mother to all my children after the example of Mary, the Mother of your Son. Through the intercession of Jesus and Mary I ask your continued blessings on my family. Let us all be dedicated to your service on earth and attain the eternal happiness of your kingdom in heaven. Amen.
