On Saint Valentine’s Day {and Baby Update}

May the Pure Love of the Sacred Heart of Jesus be Ours & Enlighten the World this St. Valentine’s Day

I started this post last week and it’s taken me a whole week to get back to finishing it. Anyway…

My girls were the creative ones this year, with their Little Way Valentines and Nutter Butter Heart Cookie Valentines! Here’s a picture of my simple contribution to this year’s St. Valentine’s Day celebration with friends. I love our collection of bundt pans. (This particular heart pan is currently 48% off!) They made cake decorating so easy when I’m low on time. I had hoped to add lots of red berries, like I did for our daughter’s When Calls the Heart birthday cake, but was never able to get to the store so I simply topped it with a holy card.

Meanwhile our little ones colored a couple St. Valentine coloring pages. Someone couldn’t find anything red to wear so he decided that green was the next best option, after all St. Patrick’s day is coming up soon! 😉

He asked me to take a picture of his coloring page to show his Godmother, the illustrator.  St. Valentine got to wear green this year too!

While our kids were at the party I had another ultrasound followed by another appointment with my doctor to check on the baby.  Despite the never-ending nausea our little girl is healthy and well!

Feb 4th: As of this weekend we’ve made it to 20 weeks! I still get sick and am nauseous on a daily basis (though not anywhere near as bad as the first trimester – those St. Nicholas Day letters/prayers from the kids did the trick!) and I have to be very careful to keep cramping to a minimum, especially with my history of pre-term labor, but it will all be worth it. Halfway there and so excited to meet our new baby girl this summer! Thank you all for the prayers. They are appreciated more than you know! #hyperemesisgravidarum #lowlyingplacenta #20weekspregnant

Feb 14th: I’m so very grateful for all the extra prayers, they are making such a difference! I was blessed with another little peek at our baby girl today… She is doing well and my placenta has also moved up a few centimeters over the last two weeks to just above the low-lying/problem area! My next appointment isn’t for a month! Deo gratias! #21andahalfweekspregnant

As of tomorrow, Feb 25th, our baby girl will be 23 weeks!

Here are a couple pictures taken last week, as I was helping the girls with their hair before they headed out the door to a hockey game with their dad and brothers. The first thing our little guy does in the morning and the last thing he does before bed is say good morning and goodnight to his baby sister. He talks to her all day long too, trying to feel her move, telling her little things about our day, or asking her what she is doing. Before leaving he ran back to give her a hug and tell her something… Then he came back to give her a kiss goodbye. I can hardly wait until he gets to hold her for the first time! #bigbrotherbabysister #unexpectedblessings #countingthedaystojune24

Still enjoying the beautiful St. Valentine’s Day roses from my husband.

Little Way Valentines

Your Little Way Brightens My Day

Our oldest daughter finished creating these rose heart covered pretzels and chocolates last night for today’s St. Valentine feast day party while I made up some labels for the treat bags! We all had to be extra creative this year, using stuff we already had in our pantry and decorating stash since I haven’t been able to get to the store, and she did such a great job!

Here is the link to our free printable documents with the Little Way labels. The quote was inspired by these cute Saint Valentines available from Salutare.
These treats would also make a great Little Flowers craft or favor for upcoming Little Flowers Girls’ Club tea parties this spring!

Happy St. Valentine’s Day!

Nutter Butter Heart Cookie Valentines

“We become what we love and who we love shapes what we become.”
~ St. Clare of Assisi
Inspired by these Simplified Nutter Butter Hearts, one of the girls spent some time making Nutter Butter Cookie Heart Valentines this past weekend in preparation for a St. Valentine’s party and card exchange tomorrow afternoon. They were so easy to make and turned out darling!
All she needed to make them was some Nutter Butter Peanut Butter Sandwich Cookies (we had some left over from her older brother’s recent Ski themed birthday – I posted his Ski Cake but still need to post the rest of the pictures!), Light Cocoa Candy Melts, and Valentine Sprinkles from our stash. We created some labels with a quote from one of her patron saints to attach to the top of each little treat bag. You are welcome to download our document if you’d like to use it too.
I spent a little time this past weekend transferring some of our past St. Valentine’s Day printables from Scribd to Dropbox and updated the links in the posts:

On the Feast of Our Lady of Lourdes

Our Lady of Lourdes Marian GrottoBernadette, The Little Girl from Lourdes
Last year our girls each received a Marian Grotto Kit in their Easter Baskets! I believe I ordered the kits from Catholic Child. You can also find them over at Sacred Heart Books and Gifts and Amazon. The older girls assembled their grottos last May (for the feast of Our Lady of Fatima – the Our Lady of Fatima Grotto kit is perfect for this year’s 100th anniversary!) but Rose saved hers for the February 11th feast of Our Lady of Lourdes.  After enjoying French Crêpes and Cocoa for brunch she started creating her miniature grotto!

Note: The older girls used regular glue and many of their gems eventually fell off and had to be regaled on. It also took forever to dry in between steps. To save some time I helped Rose glue the project together with the hot glue gun. I added the glue and she placed the popsicle sticks and gems. It turned out lovely!

O Lady of Bernadette, with the stars of heaven in your hair and the roses of earth at your feet, look with compassion upon us today as you did so long ago on Bernadette in the Grotto of Lourdes.
Happy Feast of Our Lady of Lourdes!

Snowy Mountain Ski Resort Birthday Cake

Today is Ranger’s 15th birthday! His birthday celebration started a day early (the ski resort is closed today) with a day trip up the mountain and his very first ski lesson. Today we continued the celebration at home. His cake didn’t end up quite like I originally envisioned, but I managed to pull it off despite my pregnancy nausea, and really love how it turned out. So did the birthday boy!

He, and his older brother, also had a blast skiing for the first time! More pictures coming soon.
Ski Cake

Supplies:

Directions:

Prepare and bake cakes according to directions. Cool.

Once the cakes have cooled, slice off one edge of each cake as shown in picture.

Frost the bottom of one of the larger cake pieces with 1/2 cup frosting. Top with the second larger cake piece, bottom side onto the frosting. Place these, cut end down, on cake platter or serving tray,  then place one of the smaller cut pieces in front of the two larger pieces, securing with some additional frosting.

Spread a thin layer of frosting on the top and sides of the cake to seal crumbs. (Opt: place in the freezer for about 20-30 minutes. This make spreading the final coat of frosting so much easier.) Spread remaining frosting evenly over the sides and top of the cake.

Cut two skier silhouettes from a black Wilton Sugar Sheet and place on cake. You can download the silhouettes I used here.

Decorate the cake with White Sparkling Sugar and Snowflake Sprinkles. I also went around the base of the cake creating dots of frosting with Wilton Decorating Tip, No. 7.

Melt candy melts according to directions. Place melted candy in a disposable decorating bag or baggie and snip off corner.  Using the melted candy, create trees on wax paper. I just made these freehand, starting with the brown tree trunks first on some followed by the white snow covered branches, and then switching it up by starting with the white branches first and then finishing with the brown tree trunks.  I made 15 trees of various sizes. I also added White Sparkling Sugar to some of them for extra sparkle! 🙂

Once the candy has hardened, carefully arrange the snow covered candy trees on the cake to complete the snowy mountain scene.

I’ll be back soon to share the rest of the 15th birthday ski party pictures!

Catholic Crafts from
Do Small Things with Love
“Our Catholic faith is an incredible gift. It sustains us and guides us, yet at times during these years of babies and housework, it can be a struggle to FULLY ENGAGE with our faith. What is more, as Catholic Mothers we not only crave a closeness with our God, but we are charged with raising faith-filled children and creating a holy home. We take this work of living and teaching the faith very seriously, but we often forget one very important ingredient: Creativity. I believe that creativity is one of the most powerful ways we can engage with and teach our Catholic Faith. I believe that crafting can be a prayer. I believe that children learn best when given the opportunity to create–and that we should use their creativity to help them fall in love with God and his church. And finally, I believe that anyone, young or old, can create meaningful, beautiful things. Even you. On this site you will find countless ways to live out your faith by engaging your creativity.”

Family owned and operated since its founding in 1999, we have developed great Catholic clubs like the Little Flowers Girls’ Club and Blue Knights Catholic Boys’ Clubs for Catholic girls and boys ages 5 and up. What makes these clubs unique is that they are at their core faithfully Catholic. We don’t “tack on” Catholic identity as other clubs might, but begin and end with a Catholic world view. We also believe that local clubs best operate the way they see fit, so there is no national organization, policies, registration or dues. Kolbe Academy
“Kolbe Academy was founded in 1980 by three families who experienced first-hand the rapid decline of the public school system and who were looking for a wholesome, academically challenging educational environment. The founders anticipated the need to form young Catholic citizens who could effectively defend their Faith through a thorough understanding of doctrine and regular reception of the Sacraments. They also foresaw the growing need for better, more individualized and intensive instruction in basic education. Kolbe Academy Home School became an outgrowth of the day school in 1993 when parents who lived too far away to commute asked for our help with home schooling their children. Recently Kolbe Academy merged with Trinity Grammar and Prep to become Kolbe Academy/Trinity Prep, which educates students from Pre K through high school. With a focus on providing an education that is Ignatian in MethodClassical in Content and Loyal to the Magisterium in a small-class size environment or at home, Kolbe Academy continues to thrive.”

Pro-Life Prints :: Helping Others

“Yet Lord, You are our Father; we are the clay and You our Potter: we are all the work of Your hand.” ~ Isaiah 64:7
We are three-quarters of the way through this week’s Pro-Life Prints project! Today’s Lesson 3 was all about “Helping Others.” We discussed the importance of helping others and how we always need to treat others with respect, kindness, and love.
Our five year old loves to include his toys whenever possible and brought out the elephants he received for his birthday last month as soon as he saw that we were going to be rereading Horton Hears a Who! I also pulled out a couple other books that tied in nicely to today’s theme: Roses in the Snow: A Tale of Saint Elizabeth of Hungary and LOVE from The Very Hungry Caterpillar

Bacon Wrapped Filet Mignon {Autoimmune Paleo}

Thank you all for the birthday wishes both here on the blog and over on Facebook and Instagram last week! My husband and I actually spent most of the day grocery shopping (Costco, Trader Joe’s, Natural Grocers – first big shopping trip since before Christmas due to all the storms and snow days!) but I was so grateful for the extra help since he had the day off work due to the holiday. While we were gone the boys cleaned up the house and the girls baked that amazing cake. (I sliced the leftover cake, enjoyed a piece for breakfast the next day, and put the slices in the freezer to enjoy once I ever recover from this cold/flu and the sinus/ear infections. I’m getting there!)
I already shared most of the pictures from the day, but I also wanted to share the recipe we made for dinner. It was soooo good! Since we purchase a side of organic grass-fed beef each year we are blessed with some special cuts of meat that we wouldn’t purchase otherwise. We had made this once before, as a special Mother’s Day meal either last year or maybe it was the year before, and saved the recipe. I look forward to making again for another special occasion… Perhaps for St. Valentine’s Day if I can find some more filet mignon in the freezer!

Bacon Wrapped Filet Mignon
with Paleo Mushroom Sauce

Ingredients:

  • 6 pieces grassfed filet mignon (4-6 ounces each)
  • 6 pieces pastured, sugar-free bacon
  • 6 toothpicks
  • salt and pepper to taste
  • 1 tablespoon coconut oil, bacon grease, beef tallow, or other cooking fat
  • 1 onion, diced
  • 8 oz cremini mushrooms, sliced
  • 1 cup bone broth

Directions:

  1. Wrap the bacon around the outside of each piece of meat and secure with a toothpick. Sprinkle with salt and pepper.
  2. Over medium-high heat, melt cooking fat and heat until shimmering.
  3. Place meat in pan and cook for 3-4 minutes, then flip and cook 3-4 minutes on the other side for medium rare. (For medium cook an additional 1-2 minutes; for medium well cook an additional 2-3 minutes, and for well done cook an additional 3-4 minutes.)
  4. Remove meat from pan. Tent with aluminum foil to keep warm.
  5. Cook onion and mushrooms for several minutes in now empty pan, stirring constantly.
  6. Pour bone broth into pan and use wooden spoon to loosen browned bits. Continue cooking until reduced by about ½.
  7. Pour over steaks and serve immediately.

Prayer of Mothers

Father in heaven, grant me the grace to appreciate the dignity which you have conferred on me. Let me realize that not even the Angels have been blessed with such a privilege—to share in your creative miracle and bring new Saints to heaven. Make me a good mother to all my children after the example of Mary, the Mother of your Son. Through the intercession of Jesus and Mary I ask your continued blessings on my family. Let us all be dedicated to your service on earth and attain the eternal happiness of your kingdom in heaven. Amen.
