I wasn’t the only one in the kitchen this past Saturday… Our oldest daughter has been such a huge help and loves working with me (or without me!) in the kitchen.  In these pictures she is cooking the bacon for the Club Sandwiches and, unlike her mother, she never burns it! 😉

She has been loving the pretty summer dresses we recently purchased from Lands End!

She is still 10, but we ordered the Size 12 to give the dresses extra length, and so that they will fit her a little longer. We ordered the dress in Pink Hyacinth Stripe and Wood Lily Plaid.

I couldn’t resist buying the Reese’s Oreos when I was looking for Oreos for on top of our “Worm Burners.” Let’s just say it’s a very good thing that there are nine people in our family and that they didn’t last very long.  YUM!!!

Par-Tee Time! {A Golf Birthday at the 7th Hole}

Looking at the pictures in this post you would never guess that I was not very prepared for Snuggles’ birthday this past week. All I had done to prepare was order a few things from Amazon (Golf Cart, Golf Ball Candy Mold, a book, and a couple Golf Games – which arrived quickly thanks to Amazon Prime) and created some food labels on Wednesday, then grocery shop Friday evening following the final day of the children’s Golf Camp & Tournament.

Saturday morning the birthday boy didn’t want to come out into the kitchen until his cake was ready so he could be “surprised!” (I really need to get back into the habit of making them the night before) so his Daddy came to my rescue and took him to town for a Birthday Smoothie and to run a couple errands. Thankfully everything came together quickly and beautifully despite my near panic attack halfway through decorating the cake!  😉

It was just our immediate family, but we had a splendid day celebrating this little character of ours.  I also, especially after spending very little time in the kitchen following my miscarriage the week before, really enjoyed (and went overboard) creating fun “golf” inspired foods for his special day… It was a nice distraction from the difficult week that had just passed. I hope you don’t mind, I have quite a few pictures to share with you all! 
.: Decorations :. 
One of the kind helpers at golf camp sent home the balloons from the tournament when she heard that we had a birthday the next day!  Held down with some new golf balls and tees placed in a jar (which I won at this year’s Hadley Hope fundraiser) the balloons made a fun and colorful centerpiece. 
When I noticed that Sleeping Bear Press had A Golf Alphabet book I had to order it for our collection…
… and also couldn’t resist the little pull back Golf Cart. 
(My parents have had golf carts – or “Putt-Putt” as my youngest brothers called them – since I was a teen, for riding around their property. They are always one of the highlight’s when we visit!)
.: Par-Tee Games :. 
Sean and I recently splurged at Costco when we saw the Disc Golf they had for sale.  We saved it as a birthday surprise and as soon as Sean arrived back from town, he and the boys set up the three-hole course around our property!  It has been so much fun! 
I had also planned to create a “Pin-the-Ball in the Hole” game. and had picked up a poster board when I was at the store, but my older boys (aka resident helpers and artists) were working at the neighbors all morning digging holes (their first “real” job!) and I decided it wasn’t that necessary after all… We had plenty to keep us busy for the day! 
.: Birthday Gifts :. 
In addition to the decorations and games that doubled as birthday gifts, we had a few more gifts for the birthday boy including a #7 Beaver’s Jersey! (Sean and I happened to run across some clearance Beaver’s clothing back in January and saved it for his birthday, along with some Beavers Pajamas that I wrapped.) 
Rose, who I had taken shopping with me the night before, had picked out a box of animal crackers for her brother. . . 
. . . the older boys gave him a Nerf Super Soaker, Twinkle Toes gave him a sweet card along with $1 (which she had recently discovered under her pillow after losing a tooth), and Chiquita gave him all the Not-So-Hot Cocoa gift certificates she had won during golf camp! 
A card arrived in the mail from Grandpa and Grandma G. and he also received a Lego Family House from Sean and I, which he started building immediately!

In my search for party food ideas I had run across the suggestion for Berry Blue Jello Water Hazards.  I adapted the idea, adding some Green Gummi Frogs to the top and, once the jello started to set, pushed down a few white Candy Pearls into the jello to look like Golf Balls falling into the water! 
Rice Krispie Treats cut into a kidney shape, with one end dipped into frosting or white candy melts and then covered with green spinkles, for Bunkers/Sand Traps. 

S is for a sand trap, an easy place to reach. 
But getting out is difficult. You’re swinging from the beach. 

Chocolate Pudding topped with Gummi Worms and crushed Oreos for “Worm Burner!” 
Worm Burner: When a golf ball is hit hard and is intended to go airborne but instead rolls or skips along the ground at high speed.  

B is for Birdie, a very good golf score.
It’s finishing a long par 5 with a score of four. 
Our “Sweet Tea Tee” was actually lemonade… 
… and water bottles wrapped with some Argyle Duck Tape I ordered back in 2011 and never used. 
It worked perfectly for this party!

“Fore!” shouts the golfer to make sure folks are clear.

We ended the birthday with Breakfast FORE! Dinner: 
a Bucket of Balls (aka donuts), Hole-in-One Eggs, and Fruit PARfait!

Read the green. Judge the speed. Aim it and… Guess what?
P is for a score of par. You’ve made a perfect putt.

Golf Birthday Cake

After a week of Golf Camp the birthday boy asked for a “Golf” birthday this year! It’s been hard to keep up lately, and I probably should have just ordered a cake from a local bakery this year, but I was determined to make one myself.  Halfway through I was worried that it was a total flop and emailed a friend for encouagement (I pretty much have a panic attack every time I attempt to decorate a cake!) but in the end you really can’t mess up a golf cake – all the imperfections just add character, right?! 😉

Golf Cake

Supplies:

3 – 8″ Round Cakes (I made Vanilla with Chocolate CHIP)
2 – 16-oz can Vanilla Frosting mixed with Leaf Green Icing Gel for desired shade of green

Bamboo Skewer with Flag created out of colored and white card stock
Directions:

Prepare and bake cakes according to directions. Cool.

While the cake is baking melt some of the white candy melts and place in the 3D Golf Ball Chocolate Candy Mold.  I made four so that hopefully at least one would turn out well. 😉  Gently tap the mold on the counter to remove any air bubbles. Place in the refrigerator to harden. 
After the candy has hardened, remove first halves of the golf balls from the candy mold and refill the holes with additional melted candy.
Place the completed golf ball halves on top of the melted candy in the mold and gently press down to connect the two halves.  The melted candy will harden and connect the two to create halves to create the round golf ball. 

Layer the cakes, with frosting in between each layer, on a cake platter. Spread a very thin layer of frosting on the top and sides of the cake to seal crumbs. Place in the freezer for about 20-30 minutes. (This make spreading the final coat of frosting so much easier.)

Fill the decorating bag with about 1 cup of frosting.  Spread the remaining frosting evenly over the sides and top of the cake. Using the decorating bag with the grass tip, add “grass” to the cake leaving an opening for the green.  
Insert flag and place a chocolate candy golf ball on top.  All done!

Golf Camp & Tournament

For the past four years our children have been attending a Junior Golf Camp Week each summer! Each day is packed with fun and includes lots of skills challenges to help the children learn and improve their golf game. The camp is affordable, even for our large family, and run by an amazing instructor (she was in the military and has absolutley no trouble organizing and teaching the group of 70 kids!) with the help of a number of other instructors/coaches.

First Day of Golf Camp! 
Each day starts with check-in at 8:55 with the clinics starting promptly.  (Coach Linda isn’t interested in hearing excuses… If you are late make sure who get to where you are suppose to be without interrupting. We made sure we were early each day!)
Day two of Golf Camp. . . Today they all remembered their sweatshirts.  It should warm up, but the mornings have been chilly this week. 
Monday through Thursday the participants were broken up by age and skill level to rotate through “drills and skills” with each instructor. 

Wednesday was also “Team Spirit” Day and the children were asked to come in support of their favorite team with a prize for the Best Dressed Ducks and Beavers Fans.  Most of the kids showed up dressed in green/yellow but Uncle Kevin’s nieces and nephews (and all the coaches!) had him well represented. Go Beavs!

Chiquita won the prize for the Best Dressed Girl Beaver Fan!  🙂 
(Captain and Ranger missed the contest since their group was still out on the course…) 

They work hard and come home exhausted. . .

This year’s camp came to an end this afternoon following the Master Challenge Tournament!  
They had to arrive extra early this morning, so Sean took our golfers (and Bud) and Rose and I met up with them around 10:00 am.  This gave me just enough time to walk the golf course and watch each of them play a hole with their teams. 
The tournament was divided into five age groups, each group playing a different number of holes (3-Holes/4-Holes/5-Holes/6-Holes/8-Holes) with one winner for each group. Twinkle Toes (who got a Par on hole #6!) won the tournament for the 6-Hole group and Captain (who also had a couple Pars) won the tournament in the 8-Hole Group! 
The children were all sad to have Golf Camp come to an end, but tomorrow we will be celebrating a certain little seven year old (who recently lost his two front teeth) boy’s birthday… 
Any guesses on the party theme he asked for this year? 

Civil War Day

On Father’s Day, after getting home from Mass, I spent the afternoon resting at home with the two little ones while Sean took the five older children to a Civil War Reenactment at one of our State Parks! They stepped back in time to learn what life was like for the people who lived during those turbulent times. They wandered through the Yankee and Confederate camps and talked with both military and civilian re-enactors to learn how war affected everyone.  My husband even took along my camera to take pictures for me to see and share!

(Thank you once again for all the prayers and loving comments.  They have been such a comfort. Please continue to keep us in your prayers as we bury our little Anthony, next to Gabriel, tomorrow afternoon. May God reward you all abundantly!)

O Merciful Jesus, hear me! Please listen to my plea for help. My heart is stricken, and my soul is overwhelmed with grief. I try to understand, but I can only trust. My God, I believe in Thee! Increase my faith. Strengthen my trust, for I feel so weak. Console my heart, for I know no comfort, now that I have lost my precious baby, whom Thou hadst given me. I do not know why Thou hast taken my child from me, but I know I must trust in Thy mercy and goodness. I know that Thou dost not delight in my sorrows, but dost love me with an infinite love and dost feel infinite compassion for my poor heart. Have mercy on me, Sweet Heart of Jesus, have pity on me in my grief, and comfort me. I know my little one is safe in Thy tender care. Have mercy on my baby, O Lord, and bless my baby and our grieving family.  

O Sorrowful Heart of Mary, join me in my sorrow. Thou hast known the anguish of watching thy Son die; I too have lost my child. In my grief, I turn to thee, my Mother. Cover me with thy mantle, shower me with graces, and comfort me by thy presence. Assist me and my husband through this trying time; may our hearts draw even closer to each other and to Our Merciful Lord in this painful time. Help us to trust in His goodness and love, as thou didst trust, long ago, beneath the Cross of Calvary. As for our dear baby who has departed for us, I entrust this child to thy care. My child did not (while still living*) have the opportunity to receive the Sacrament of Baptism; nevertheless, take him under thy mantle, watch over him and pray for him. I know thy prayers have never failed before the Heavenly Throne. And, O merciful Mother, watch over our family, comfort us in our grief, and help us to find peace and solace in trusting in the goodness and love of our merciful God, in whose care our dear baby rests. God’s Will Be Done

My heart sank and I whispered a prayer the minute the ultrasound tech brought up the image on the screen as she tried to find the baby inside my womb this morning. It didn’t take long for my husband and I to see that there had been no development since my last ultrasound.  Deep down I already knew that we’d recieve sad news today, especially after seeing very little development between the 1st and 2nd ultrasounds combined with the disappearance of my pregnancy symptoms, but I kept hoping for a miracle and praying I would be surprised during this 3rd ultrasound with a beating heart and healthy baby. Instead our hearts broke and the tears started flowing.

Please pray for us.

I was able to schedule a follow-up appointment with the same specialist from my last miscarriage for tomorrow morning, and I’ll most likely be going to the hospital afterwards. We’ve also started to make the arrangements for our little one to be buried. It has been such a hard day.

May God reward you abundantly!

Please pray for the soul of Fr. Kenneth Walker, FSSP (pictures from his First Mass in 2012 here) who was shot and killed during a robbery at the Mater Misericordiae (Mother of Mercy) Mission in Phoenix, AZ.  Please pray for the family of Fr. Walker.  Please pray for Fr. Joseph Terra, who is in critical condition but stable.  Please pray for all the families who attend Mater Misericordiae. Please pray for the safety of all FSSP priests.   (Update: Pray For The Priests of Mater Misericordiae in Phoenix on FSSP website)

Hiking the Gorge Trail

Last Saturday afternoon, during our recent camping trip, we went on a hike along the river to see the Gorge! It was absolutely breathtaking and the pictures don’t do it justice.

In this area the river cascades through a constricted channel of basalt lava and the gorge was formed over many years by the erosive action of the river. 

I still can’t believe that I’ve lived here since I was a teen and this was the first time I had seen the Gorge. I have driven by in the past, but never stopped to walk the trail…  I guess it took me over 20 years to visit Crater Lake for the first time too!

.: Lava Tubes :. 

Here the opposite wall of the Gorge exposes two lava tubes. One, partially collapsed, looks like a cave. The other tube was plugged by a later lava flow.

The lava tubes were formed by the rapid cooling of the outer surface of a basalt flow, while the hot lava continued to flow underneath. As the molten lava drained out, it left behind a hollow tube.

.: The Chasm :. 

The Gorge forms a chasm 500 feet long.  The Gorge narrows to 25 feet from the platform’s edge to the opposite wall, and it drops 45 feet to the River. 

Look down at River: enough water (410,000 gallons) flows beneath your feet each minute to fill an Olympic-size pool . . . but with an average temperature of 44˚F would you want to swim in it? Because of the upper Rogue’s very cold water, native fish do not grow to a large size. 
.: The Living Stump :. 

Here on the flat surface of the lava flow, away from the Gorge wall, the trees live as a group rather than as individuals. The roots of these Douglas-firs have grown together, providing each other with nutrients and water. 

Before it was cut, the roots of this tree had grafted onto those of a neighbor. Because of this, the stump continues to live. 

.: Nature’s Rock Garden :. 

Here at the outlet of the Gorge, a tree must be a “rugged individual” to survive the harsh conditions – the lack of soil, hot and dry summers. The Douglas-firs across the River – by sending their roots deep into the fractured rock in search of water – cling to the wall like climbers on a cliff. 

.: The Gorge Outlet :. 

This was as far as we hiked with with the little ones, but Sean took the older children down to the end of the trail to the Natural Bridges where the river disappears entirely underground into a lava tube for about 250 feet before reappearing and then continuing it’s journey towards the ocean.

We hiked the Gorge trail last Saturday and it was incredibly pretty… and pretty terrifying! I was thankful for the safety fences along the trail, especially hiking with all the children, and that we had chosen a campsite (at our campground upstream from the Gorge) that wasn’t along the River.

While we were roasting marshmallows, Captain pulled back his stick too quickly to check his marshmallow and all the outer layers flew off the stick and landed right behind him! 
His Dad told him that a two prong roasting stick (like I was using) was probably a better idea.  

He grabbed another stick and made his own.

Of all of our children, Rose definitely likes camping the least.  
She did like sitting in her Grandma’s reclining chair and watching the river at their campsite!
When I asked our little princess if she liked camping she hesitantly said, “yyyyes…” 
… and when I asked if she would you like to go camping again she said, “ummm, maybe NOT!”

Father in heaven, grant me the grace to appreciate the dignity which you have conferred on me. Let me realize that not even the Angels have been blessed with such a privilege—to share in your creative miracle and bring new Saints to heaven.
